Mahi Mahi
I was looking for a recipe for Mahi Mahi because Sprouts our local farmers market had it on sale this week. I got a few ideas from different things I read.....Here is what I did!
2 pounds of Wild Caught Mahi Mahi
1. Place Mahi Mahi in dish preparing to marinade
Marinade:
Trader Joe's everything seasoning
lime: whole fresh squeezed
Raw Honey: 1 tbsp
Cilantro: handful chopped
Organic Olive Oil: 1/4 cup
Pink Hemalayan Sea Salt 1/8 teas
Pepper
Mix everything together accept cilantro and then throw that in and stir. Pour on Mahi Mahi and let sit for an hour. We grilled ours on Medium until sides were a bit crispy but middle was tender. Do not overcook. You can broil in the oven as well at 350. I did this on the following days to warm it up for my salad the next day. **helpful, use fork to shred in small pieces if making for this salad to make sure all bones are removed. You can also make this for a dinner dish as well.
Salad Dressing:
1/4 cup balsamic vinegar
1/4 cup organic olive oil
1 tbsp raw honey
mix well, place in airtight container ---no need to keep cold.
Salad:
2 cups spinach
1 cup mixed greens
(can vary based on what you have on hand)
Dressing 1 tbsn or half orange container
Fresh Raw parmesian cheese 1/3 to 1/2 blue container
Chopped walnuts 1/3 to 1/2 blue container
1 pear chopped into pieces
Put Lettuce, dressing and pairs in bowl... toss. Place parmesian and walnuts on top with 1 red container or portion of Mahi Mahi.
21 Day Fix
1 red container
1 orange container
2/3 to a whole blue container (I like to save room for chopped pecans if I am having greek yogurt later)
3 Green Containers (I love to get my veggies done and in ;)
1 purple
